Spice up your weekend brunch

While we traveled India we couldn't get enough of these! Aloo Paratha,or spiced potato bread, has got to be one of our absolute favourite Indian dishes. A meal in itself, the combination of fried bread, Indian spices, and mashed potato is seriously satisfying and makes a great option for weekend brunch. Surprisingly easy to make at home, try these with our Masala Chai or Turmeric Chai for an authentic Indian feast!

Instructions

Before you start, boil and mash the potatoes. 

Make the dough:

  1. Mix flour, salt and oil together well in a bowl

  2. Add a little water at a time and knead until you have a soft dough

  3. Cover and keep aside to rest for 15 minutes

Make the stuffing:

  1. Empty the boiled and mashed potatoes into a mixing bowl.

  2. Add chopped green chillies, onion, coriander leaves and ginger

  3. Add cumin powder, coriander powder, dry mango powder or lemon juice, and salt. Add red chilli powder if you like it spicy. Mix together well.

Make the Aloo Parathas:

  1. After the resting time, knead the dough once again for 2-3 times to smooth it out. Divide into 8 equal portions and roll into smooth balls. Flatten out each ball to a 3-4 inch circle.

  2. Divide the stuffing by placing it into the centre of the circles. Then fold each circle back into a ball, holding the stuffing in the centre. 

  3. Flatten the balls by hand then roll them into 6 inch round parathas. Dust the rolling board with some dry flour to prevent them from sticking.

  4. Heat a flat frying plan (or Tawa, if you have one) on medium flame and fry the parathas using oil or clarified butter on both sides until golden brown.

  5. Serve hot, topped with a dollop of butter, and some plain curd or yoghurt on the side.
