Sweet and indulgent but with that lovely savoury, earthy tone only beets can give, chef Jeroen calls these brownies "The next best thing since sliced bread".
We met Jeroen Bouterse when we visited Google Amsterdam, where he oversees the Google Food program and Google Cafe. Seeing the amazing array of food he and his team put together, we of course had to ask him for one of his favourite recipes.
Having tried these beetroot brownies we have to admit...these are delicious! With this list of ingredients, surely they are at least as nutritious as sliced bread?
How to make yourself a batch:
Instructions
Preheat oven to 350ºF / 180ºC.

Place coconut sugar, beetroots, almond milk, oil, lemon juice, and vanilla in a food processor and puree.

Place flour, baking powder, and salt into a large mixing bowl. Sift cocoa powder into bowl and whisk to combine.

Add the beet mixture to the dry ingredients in your mixing bowl and stir until just combined. Do not overmix.

Pour batter into a 9x9-inch baking pan sprayed with baking spray.

Bake for 25 minutes until a toothpick inserted in the center comes out clean. Allow to cool completely before cutting.

Sprinkle with grated coconut
